Green & Red Tomato Chutney with Sichuan, Saffron & Umami

A bold twist on the classic garden tomato chutney. Sharp green and sweet red San Marzano tomatoes come together with tingly Sichuan pepper, sweet fennel, floral saffron, and a splash of fish sauce for deep, multi-layered umami.

Ingredients

The Produce & Aromatics

  • 1 kg (2.2 lbs) San Marzano Tomatoes: A roughly equal mix of firm green and ripe red tomatoes, cored and roughly chopped.
  • Handful of Fresh Jalapeños: Finely diced (leave seeds in for extra heat, or deseed for a milder batch).
  • 2 Medium Yellow Onions: Finely chopped.
  • 4 Cloves Garlic: Minced.
  • 1 tbsp Fresh Ginger: Grated.

The Spices

  • 1 tsp Sichuan Peppercorns: Lightly dry-toasted and coarsely crushed.
  • 1 tsp Fennel Seeds: Lightly dry-toasted and crushed.
  • Generous Pinch of Saffron Strands: (Approx. 15–20 threads).

The Liquids & Seasoning

  • 250 ml (1 cup) Rice Vinegar: A mild acid that keeps the fruit and saffron colors bright.
  • 225 g (1 cup) Light Brown Sugar: Adds rounded sweetness without heavy molasses notes.
  • 1½ tbsp Fish Sauce: The crucial middle-note umami link that ties the acidity to the spices.
  • 1 tbsp Light Soy Sauce: Adds salinity and depth (avoid dark soy to preserve the vibrant visual balance).

Step-by-Step Method

  1. Bloom the Saffron: Take 2 tablespoons of warm rice vinegar from your measured total and place it in a small glass. Crumble the saffron threads between your fingers into the vinegar and set aside to steep for at least 15 minutes.
  2. Toast & Grind the Spices: In a large, heavy-bottomed preserving pan or Dutch oven, dry-toast the Sichuan peppercorns and fennel seeds over medium heat for 1–2 minutes until fragrant. Transfer to a mortar and pestle and crush coarsely.
  3. Sweat the Aromatics: Add a small splash of neutral oil to the pan over medium heat. Add the chopped onions, garlic, ginger, and jalapeños. Cook gently for 5–6 minutes until translucent and soft, but not browned.
  4. Combine: Stir in the chopped green and red tomatoes, sugar, remaining rice vinegar, crushed Sichuan peppercorns, fennel seeds, fish sauce, and light soy sauce. Stir continuously until the sugar completely dissolves.
  5. The Slow Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Simmer uncovered for 1 to 1.5 hours, stirring occasionally to prevent sticking.
  6. The Saffron Finish: Pour in the steeped saffron liquid and strands during the last 10–15 minutes of cooking. Stir well to integrate the honeyed aroma and golden color. Taste and adjust with a pinch of fine salt only if needed.
  7. Jar & Seal: Ladle hot into warm, sterilized jars and seal tightly immediately.

Cook's Notes & Serving Tips

Consistency Check: Drag a wooden spoon through the center of the pan—if it leaves a clean track that doesn't immediately flood back with liquid, your chutney is ready to jar.
  • Texture Balance: Green tomatoes supply natural pectin for a chunkier texture and a crisp, sour bite, while the red tomatoes break down into a luscious sauce.
  • Maturation: It tastes fantastic immediately, but letting the sealed jars rest in a cool, dark cupboard for 2 to 3 weeks allows the vinegar edge to round out into the spices.
  • Pairings: Excellent on plancha-seared burgers, alongside sharp aged cheddar, or served with grilled pork belly and grilled meats.
